Recipe Corner – Quesadilla

It’s the easiest dish and always wins the prizes. When you are in a rush leaving home and need to prepare a fast lunch to go.
You just need a tortilla (Mexican round-flat-bread, or anything looks like it). Inside it you to need put cheese, the most important part, because “Queso” from Spanish is cheese. So, it’s kind of the main ingredient.
Traditionally, quesadillas have chicken, precooked, grilled (from the previous day will work). But you can always put some ham, tomatoes, avocado, or even yesterday evening’s mac and cheese, it would be a sensational quesadilla!
You close it, make a half circle, put it inside the toaster oven, or put it on the pan, even a sandwich maker but on a very low heat, because tortilla bread can puff up and get burned easily. So, wait till the cheese melts, each side will take 2-3 min, remember on a low heat. After the quesadilla is ready, I suggest cutting it in half to eat it easier or fácil!
I have a confession, I like to use my kitchen scissors to cut everything, especially when it deals with quesadilla or even pizza, or focaccia bread!
